Vermicelli/ Glass Noodles are a type of transparent noodle made from starch (such as mung bean starch, yam, potato starch, cassava, canna or batata starch) and water.
They are generally sold in dried form, soaked to reconstitute, then used in soups, stir fried dishes, or spring rolls. They are called "glass noodles" or "cellophane noodles" because of their appearance when cooked, resembling cellophane, a clear material of a translucent white color.
Vermicelli/ glass noodles are generally round, and are available in various thicknesses.
In general, Vermicelli noodles are a semi-processed dry food which is common in fast food restaurants and families in Vietnam.
