1.DESCRIPTION: We have starch acetate. By reaction with acetic anhydride or vinyl acetate. Ether groups work against degradation amylose. Modified this way helps prevent freezing gels or drip and keep the original surface. This also increases the stability of dense - melt, increasing the water holding capacity and lower the freezing temperature of the starch glue, the match was increased a little and transparency is improved. The result of this process is to create starches with stable, transparent, low gelatinization temperature. This type of starch pastes will help withstand the freeze thaw cycle and prevent water leakage phenomenon occurs, while preserving the original surface texture of the product.
